Experiment 1: Day 6 - 7
Fermentation monitoring: https://docs.google.com/spreadsheets/d/1mLQVFdRuoVc6-JLPSalp7-JILbds15dN4H70uX2bRB0/edit?usp=sharing
By the day 7, the wine is ready. My samples have reached 9% of alcohol. I will siphon the ferments to new containers/bottles and get rid of the sediment that has left at the bottom. I will use plastic hose which I will insert into the jar (not till the bottom - right above the residue). I will suck the wine with a mouth, tap it with the finger and place the second end to the new bottle set in lower position (this is the law of hydraulics) - the wine will flow by itself. This is how I get the clean liquid.
I will also try to evaluate the taste and aroma of these two wines. I have created a simplified wine tasting chart: https://must-diywine.blogspot.com/p/taste-and-aroma-wheels.html
